I threw this together in the middle of a very real kitchen moment—bits and bobs everywhere from weekly meal prep, luteal phase politely knocking (read: I needed crunch, immediately). Enter my beloved courgettes.
Fun fact: courgettes are technically a fruit. They’re about 95% water, naturally low in calories, and the skin is where you’ll find eye-friendly antioxidants—so keep it on for the full benefit. 🥒👀
For the crisp factor, I went with tapioca flour. It’s almost pure starch, which in the air fryer pulls moisture to the surface and helps lock in that golden crunch—all without a deep-fry situation. 🥢🔥 You can use another flour, but the poppers won’t be quite as shatter-crisp.
And the cheese… confession time. The recipe says feta, but I actually used a salty, strong Romanian sheep’s cheese my family makes. Not exactly a fridge staple, so feta (or any salty, full-flavoured, not-too-wet cheese) is the closest match and works beautifully.
